I suppose you did not install the "just fly" mod, right?

In default (hard) mode it depends on the aircraft how long it takes to damage the engine.
With the A-5 and A-6 it will take about 4 to 6 minutes.
With the A-7 and A-8 (which use the improved BMW801D-2 F600) it can take in excess of 10 minutes at full throttle.
The A-9 is very hard to damage at all.
The only way to instantly kill an engine is by giving full throttle to a cold engine when on the ground.
